What better way to start your morning off than with a hot cup of tea and a healthy Chocolate Chickpea muffin, all while taking in some fresh air and sunshine. Seriously though, these muffins are great at any time of day and my little man would second that in a heartbeat! My son, absolutely loves these delicious dairy-free, gluten-free Chocolate Chickpea Muffins – These are a firm family favourite and are great as just healthy school muffins or party treats, its really up to you.
I’ve served them up at my sons birthday parties with some icing on top as cupcakes, and to adults at a cheese and wine party; Im yet to meet someone who hasnt relished in the moist gluten-free chocolate sponge that melts in their mouth. It’s a recipe I hold dear to my heart for the memories it brings and I couldnt think of a better one to share with you all on my first blog post.
-Here’s what you need to create these delicious treats.
1 can of chickpeas (drained and rinsed from the tin)
1/2 cup of honey or agave syrup
3 large eggs
1/3 cup of cocoa (I use raw organic cocoa powder as it’s filled with antioxidants and nutrients)
1tsp baking powder
3Tbsp virgin coconut oil
1 tsp vanilla extract.
Preheat the oven to 180c
Place everything into a blender, blend until smooth.
Pour into cupcake cases in a muffin tray and bake for +- 20 minutes.
I try to limit sugar to an absolute minimal in our house, so these are made with Raw honey, but you could also use agave syrup.
