When Life gives you Granadillas and over-ripe Bananas.
Okay so the over-ripe bananas were from my mum and the Granadillas were given to me by my younger sister. I was going to make chocolate banana brownies ( a household favourite) and freeze the rest of the bananas to make Banana nice-cream, which Cooper and I love, but decided hey why not create something with the two together. Turned out I had enough bananas to do both, Chocolate Banana Brownies and Granadilla Ice- cream.
Not just an ice-cream
The Ninja mom in me came out again and I ended up sneaking in some health-inducing ingredients for an extra kick! So never mind the bananas and granadillas which both have their own benefits, I also snuck in:
Cinnamon: Has great antioxidant properties as well as fighting inflammation. It can improve sensitivity to the hormone insulin and so makes it beneficial to those with type 2 diabetes, or anyone consuming sugar. It does so by lowering the blood sugar. It also helps to fight bacterial and fungal infections making it great for coughs, colds or flu.
*make sure you are buying ‘true’ cinnamon. There are two types of cinnamon the one, which is commonly found in supermarkets has a compound in it called coumarin, which in large amounts is thought to be harmful. So always buy organic or ‘Ceylon‘ cinnamon.
Chia seeds: Don’t be fooled by their tiny size, chia seeds are among the most nutritious foods on the planet. They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients. They are high in protein and fiber and contain a decent amount of omega 3 fatty acids. They are thought to be the fuel of the Aztec warriors.
Gelatine: It can be found naturally in bone broth and that would be because gelatin is derived from the skin, bones, and tissue of animals. This doesn’t sound too appetising, but you’d honestly never know you were eating it, it is pretty tasteless. Its also whats used to make Jelly. Its benefits range from healthy hair, nails, and skin, to great gut health.
Nothing excites me more than knowing my son is enjoying a treat but is also getting in some serious nutrients. It’s an all round win win situation! Here’s the recipe so you too can win at life 😉
- 4 ripe bananas
- 5 granadillas
- 1 tsp chia seeds
- 1/4 teaspoon cinnamon
- 1/4 cup milk (almond, coconut, goats, rice etc)
- 1 tsp gelatine granules
- Peel the bananas and place into a blender.
- Cut the granadillas in half and remove the pulp using a teaspoon, add to the bananas in the blender.
- Add in the cinnamon and chia seeds.
- Warm the milk slightly and add in the gelatine, stirring to make sure it dissolves, once it has dissolved add the milk mixture to the blender.
- Blend all ingredients together and pour into popsicles or a container to be placed into the freezer.
- Freeze for 3-4 hours and enjoy.
